What is Charcoal-Grilled Chicken?
It is a traditional local dish of Miyazaki Prefecture, in which chickens are roasted over an open flame using a charcoal fire created with charcoal as fuel.
Widely known as Miyazaki’s local delicacy, it is characterized by the distinctive aroma of smoked meat from the charcoal fire and the black color from the charcoal.
Local/Jidori chicken is cut into small pieces, seasoned with salt and pepper, and grilled over a high charcoal fire until the charcoal is blackened and golden brown.
Charcoal-grilled chicken made with Miyazaki Jitokko, Miyazaki’s local/Jidori chicken, is widely known as a local delicacy of Miyazaki.
It is served at restaurants and other establishments in Miyazaki Prefecture, and outside of Miyazaki Prefecture, there are many restaurants serving it, mainly in urban areas such as Tokyo, Osaka, and Fukuoka. Today, vacuum-packed charbroiled souvenirs are also very popular.
