Hakata Ramen (noodle)

Overview

Hakata Ramen(博多ラーメン)is a popular ramen served by many noodle shops, Chinese restaurants and market stalls in Fukuoka city.

In general, the soup of the Hakata Ramen is milky white, mainly from pork bones. The pork bones are boiled over high heat, which causes the collagen and other substances in the bones to dissolve, resulting in a cloudy soup.

The noodles of Hakata Ramen are very thin. And, it is common to be able to decide the hardness of the noddles when ordering. The hardest one is “barikata (バリカタ)” and the softest one is “bariyama(バリヤワ)”.

It is also common to be able to order only additional noodles, know as “kaedama(替え玉)”.

There are many places where you can enjoy Hakata Ramen, including on the platforms of Hakata Station.

Hakata Ramen has become so popular and nationally known that many Hakata Ramen restaurants have developed outside of Fukuoka. Some of these Hakata Ramen chains even have branches overseas.
