Kumamoto Ramen (noodle)

Overview

Kumamoto Ramen(熊本ラーメン)is pork bone ramen mainly served in Kumamoto city. It is propagated from Fukuoka where pork bone ramen was born.

Kumamoto Ramen, unlike Hakata Ramen which uses thin noodles, has ticker noodles. And, Kumamoto Ramen is different from Hakata Ramen in the addition of chicken broth.

It also features fried garlic chips or oil fried with garlic in the soup.

Some restaurants do not use chicken bones in their soup, instead using only pork skulls to make the soup.

Kumamoto Ramen is widely served in Kumamoto city, and some restaurants have expanded to other areas of Japan. And, Ajisen Ramen has a large chain of stores in China.
